Miyasaka Jozo
Miyasaka Jozo (宮坂醸造), established in 1662, is located in Suwa City, Nagano Prefecture. The brewery is renowned for its flagship sake brand, Masumi (真澄), named after the sacred Masumi no Kagami (真澄の鏡), a treasure of Suwa Taisha (諏訪大社). The region's pristine water sources and cool climate contribute significantly to the quality of their sake.
Miyasaka Jozo is committed to traditional brewing techniques while embracing innovation. They carefully select and polish rice, ensuring precision in every step of the brewing process. The brewery is particularly known for its junmai (純米) and ginjo (吟醸) styles, which emphasize pure rice flavors with delicate, fragrant notes.
In recent years, Miyasaka Jozo has focused on modernizing its production while maintaining artisanal craftsmanship. One notable development is their ongoing research into yeast strains, including the famous Kyokai No. 7 (協会七号酵母), which was originally discovered at the brewery and has become a staple in sake brewing across Japan.
Miyasaka Jozo continues to balance heritage with innovation. They are exploring new product lines, including limited-edition sakes, and are expanding their reach globally, showcasing their craftsmanship to a wider audience.
