Saiya Shuzoten

Saiya Shuzoten (齋彌酒造店), established in 1902, is located in Yurihonjo City, Akita Prefecture. The brewery was founded by Yataro Saito (齋藤彌太郎) and is situated with views of Mount Chokai (鳥海山). Its flagship brand is Yukino Bosha (雪の茅舎), a name inspired by the snow-covered thatched-roof farmhouses that dot the area during winter.

Saiya Shuzoten’s brewery is built on a unique 6-meter slope, earning it the name Nobori-gura (のぼり蔵), or "climbing brewery". This design makes use of natural topography, gravity, and optimal ventilation to streamline the sake brewing process, minimizing unnecessary strain on the production.

Known for its dedication to traditional brewing methods, Saiya Shuzoten emphasizes natural fermentation, using locally sourced rice and pure water from the region. Their sake is characterized by clean, elegant flavors with a focus on balance and nuance, particularly in their junmai (純米) and daiginjo (大吟醸) offerings.
